Pumpkin recipe

Autumn is slowly creeping in, the days are getting shorter and the evenings are cozier. This makes it all the more important to brighten up your evening with warm, delicious meals. It is important for both children and adults to get enough vitamins and healthy vegetables during the cold season. We have written down our favorite recipe for you and there is only one key word to mention: pumpkin!!!

As absolute pumpkin fans, we are particularly happy when the leaves change color outside and the golden autumn is approaching. The advantage of our pumpkin recipe is clearly that it is ready quickly and, above all, a warm meal.

Our favorite pumpkin is Hokkaido. Of course, you can also use any other pumpkin that is al dente. Unfortunately, there are often differences in taste. Don't despair if the recipe doesn't always turn out well. It's ALWAYS delicious though.

Ingredients for 2-3 people:

  • 1 Hokkaido pumpkin
  • 1 pack of feta
  • Lettuce or beetroot
  • Spices of your choice

Preparation:

Wash the pumpkin thoroughly, hollow it out and cut it into thick wedges. You can rub the cracks with a little oil and season with nutmeg, paprika powder, pepper and salt.

Preheat the oven to 180 degrees top and bottom heat.
You can either cut the feta into small rectangles or crumble it over the pumpkin with your hands later.

Bake:

Now the pumpkin can bake in the oven for 30 minutes. In the last 5-10 minutes add the feta and, if desired, a little honey. Then you bake the feta until it starts to melt slightly and the pumpkin becomes soft.

And tadaa, you now have an incredibly delicious pumpkin recipe that we would love to eat every evening. As a side dish, you can make a simple salad or a beetroot salad that is dressed with olive oil, balsamic vinegar, pepper and salt.

The recipe also works as a vegan version with vegan feta. If you're not a fan of pumpkin, you can replace it with sweet potatoes or other vegetables.
